Apple crumble with oats: leave a few bigger crumbs
Do not rub the mixture too finely. The larger crumbs are part of the pleasure of spooning through the topping to the soft apples below. Oats give the top a coarser texture, while cinnamon goes in with the fruit.

Apple growing in the Betuwe inspires this dessert. The crumble is our own kitchen variation using apples from the region, without claiming to be a traditional Betuwe dish.

Equipment
Baking dish about 20 × 25 cm, mixing bowl and scales.
Ingredients
- 800 g sweet-tart apples, weighed peeled and cored
- 80 g plain wheat flour
- 60 g rolled oats
- 75 g cold unsalted butter, including 5 g for the dish
- 70 g light brown sugar, divided into 20 g and 50 g
- 15 ml lemon juice
- 2 g ground cinnamon
- 1 g salt
Method
- Preheat the oven to 180 °C, conventional heat. Grease the dish with 5 g butter. The oven can preheat while you chop and mix.
- Cut the apples into cubes about 1.5 cm across. Mix in the dish with the lemon juice, cinnamon and 20 g sugar.
- Mix the flour, oats, remaining 50 g sugar and salt in a bowl. Dice the remaining 70 g butter and rub it into the mixture with your fingertips. Leave a mixture of small and larger crumbs.
- Scatter the crumbs loosely over the apples without pressing them down. Bake in the middle of the oven for 30–35 minutes, until the top is golden and a knife slides easily into the apples. If the apples are still firm, bake a little longer; loosely cover an already browned topping with foil.
- Leave to stand for 10 minutes before serving. The filling stays hot.

Storage
Cool leftovers in small, shallow containers within 2 hours, then cover and refrigerate at 4 °C. Eat within 2 days. Reheat only the portion you need, once, until steaming hot throughout.
